This week on The Next Iron Chef, Indian cuisine seemed to be a real obstacle for the contestants, plus the added stress that this test resulted in a double elimination. The contestants were given two hours to make a five-course Indian feast. Oh the pressure! Some fell short, and Chef Trevino, a fan favorite, was asked to go packing. Check out my exclusive interview below for his thoughts on the show and the elimination.

Were you surprised to be in the bottom two this week? Did the double elimination put a great deal more pressure on you?
Well. you never really expect to be eliminated, but I have to admit, in this case, I did. This whole thing (the show) was so new for me. I had a bad feeling that morning it was time for me to say my goodbyes. Just a gut feeling I had. So I was prepared.

You seemed to have such a good time on the show. Chef Farmerie had commented to me on how funny you are! Did you have at least have fun? It seemed like a love/hate relationship to me with the show.
Oh yeah, I was having lots of fun. I mean, being in the kitchen is my life, but it can also be hellish! The show really took me back to what I love about being a chef--the madness and chaos. I tried to entertain and cook my best. I think I treated the audience like the customers in my restaurant. You have to show your personality in everything you do.

You competed against Iron Chef Batali on an Iron Chef America episode. What was that like? Do you felt like it gave you a bit of an advantage going into this competition?
Yes, I competed in the second battle of the first season. It was great! The theme ingredient was catfish... man those things can be viciously mean! I lost of course, but I do think the experience of it allowed me to be a little more relaxed.You just have to accpet what you are there to do.

You chose beef as your protein in the five-course Indian feast. The judges said this was not an ingredient typically used in Indian cooking. Would you have chose something different if given another chance?
You know, after the show aired, my Mother asked me the same thing... "Bobby, why did you choose beef??" After the competition it finally hit me that I should have chosen something else. Like I said on the show, I am not that familar with cooking Indian cuisine. But all I could do was use my time wisely and try to be practical. I stand behind my dishes all the way.

Are you rooting for any chef in particular?
They are all so talented. I am rooting for them in life, really. I just want everyone to do well after the show, win or lose. I am sure the next Iron Chef chosen will be he right person for the job.

Any advice for up and coming contestants?
Take deep breaths and do what you do. Cook like you have never cooked before and be true to your cuisine.

Future plans?
Open more restaurants! I hope to continue to work with great people who inspire me. I especially want to work on opening a place in America. Currently I am in Peurto Rico.
