Guangzhou, formerly known as Canton and located in the Guangdong province of Southern China, is the birthplace of Cantonese cuisine. For Americans, Cantonese is perhaps the most familiar of all Chinese cooking, due to heavy emigration from Guangdong to the U.S., along with the simple, unpretentious flavors and family-style presentation.
The Cantonese style of cooking, as a general rule, is meant to let the main ingredients shine, which means light sauces and a sparing use of herbs. It's also a type of cuisine that uses almost all parts of the animal or seafood, from organs to hoofs. And, Guangzhou is also the home of everyone's favorite morning dining experience: dim sum!
