
Rule number one in fine Chinese dining: look around you and follow the social cues. I spent most of one meal dunking exquisite dim sum into my tea. The locals at the table were kind enough not to say anything.
Although it's located in the Guangdong province, Shenzhen is a city of immigrants so it doesn't have the same Cantonese influences as nearby Guangzhou (formerly known as Canton). Even the primary language in Shenzhen is Mandarin, not Cantonese. With its eclectic population and constant influx of business travelers, every type of Chinese and international cuisine is available in Shenzhen.
