Soligo Prosecco Brut

Prosecco is a sparkling Italian wine that is made with a native white grape of the same name. Prosecco is most commonly grown in the Veneto region near Verona. A great and more affordable alternative to Champagne, Prosecco is also nicknamed a “pick-me-up” wine. Served ice cold, a glass of Prosecco is fantastic on a hot summer day. The Bellini was invented with Prosecco as the main ingredient and peach puree as the other. One of the best Prosecco producers is Colli del Soligo, established in 1957 near the Soligo River. Soligo Prosecco is served at some of the finest establishments in Miami, including Viceroy and Mandarin Oriental. Prosecco by Soligo also comes in tiny 187m glass bottles that are perfect for an afternoon “pick-me-up”. On the palate, Soligo Prosecco is creamy and foamy with flavors of ripe peaches and lemon zest. Soligo Prosecco pairs fabulously with Relish Miami’s Mango Dressing over mixed greens.  Soligo Prosecco is available at Laurenzo’s Italian Market in North Miami or at your local wine retailer. If they don’t have it, tell them to call Vinifera.

Mango Dressing

1 Large ripe mango (even over ripe is ok) peeled and cut into chunks
1 shallot minced
2 tbsp orange juice
1/2 c Olive Oil
2 tbsp chopped fresh cilantro
salt and pepper to taste

Put the mango chunks, orange juice, shallot, in a blender. Pulse until mango is pureed. Add the olive oil, slowly at first with the blender on slow, then increase speed, add the cilantro. Taste and adjust salt/ pepper. I love to use white pepper here.

Toss mixed salad greens (romaine and micro greens work well here) with thin slices of red onion, and chopped mango.
