
Everyone remembers when they were kids eating that lunch staple at the cafeteria in grade school: sloppy Joes. And it always looked so unappetizing to us as kids. Well, now here’s a variation of sloppy Joes that I have aptly named sloppy Jimmy’s, that utilizes ground chicken instead of hamburger. It’s a very flavorful alternative to that everyday, boring sloppy Joe sandwich.
Prep time: 20 minutes
Cook time: 4 hours
Total time: 4 ½ hours
INGREDIENTS:
1 pkg. 1 ½ lbs. ground chicken***
1 29 oz. can tomato sauce
½ cup crushed pineapple
¼ cup sweet pickle relish
½ cup ketchup
To taste: garlic salt, garlic and pepper, Montreal chicken seasoning
1 each pita bread, sourdough bread, or seeded hamburger bun
***Check Sprouts or Sunflower market for ground chicken. The ground chicken used in this recipe was bought from Sprouts.
PROCEDURE:
1. In a sauté pan, heat to high heat and add some oil to the bottom to cover. Once heated through add the ground chicken.
2. Cook the chicken, using a potato masher to break into smaller pieces. Continue to cook until slightly golden brown. Remember that the chicken doesn’t need to be cooked all the way through because you’re going to continue cooking it in a crock-pot.
3. Add the chicken to the crock-pot, and proceed by adding the tomato sauce, pineapple, relish, and ketchup.
4. Season to taste with the garlic salt, garlic and pepper and the Montreal chicken seasoning. Stir to combine.
5. Turn the crock-pot on high and cook for 2 hours. Turn down to low after that and continue cooking for 2 more hours.
6. To serve the sloppy Jimmy’s, toast your choice of bread; pita bread was used here. Then top with the sloppy Jimmy mixture.

VARIATIONS:
*As mentioned above this recipe was made with ground chicken, which is a healthier alternative, but it can also be traditionally made with ground beef or even interchanged with ground turkey or ground pork.
*Play around with the bread used. Pita bread is a healthy alternative, but the sloppy Jimmy’s can also be served on toasted sourdough bread, or even made into a sandwich on a seeded hamburger bun.
*Feel free to also top this sandwich with coleslaw, but it’s best just eaten the way that it is so you can really taste all the flavors inherent in the chicken mixture.
