Finished Lomi lomi salmon salad

This recipe can kind of be compared to a Mexican ceviche if that’s how you want to look at. Lomi lomi salmon is found all over Hawaii and is definitely a staple at most luau’s and restaurants. ‘Lomi lomi’ can refer to two things-a relaxing spa massage or a tasty salmon dish. It gets its name from the way herbs and other ingredients are hand-rubbed into the salted fish. Hawaiians created the island specialty in the 1800’s as a way to combine abundant fresh produce with sailors’ stocks of salt-preserved fish. It will no doubt be served all over Hawaii when it marks its golden anniversary as a U.S. state on August 21st. For more information check out the Food Network Magazine.


Total time:
30 minutes (plus 24-hour curing)


INGREDIENTS:

For the salmon:

1 cup kosher salt
½ cup sugar
½ bunch of fresh cilantro
1 pound wild salmon fillet, skin removed, rinsed and patted dry

For the salad:

¼ chopped fresh cilantro
2 plum tomatoes, seeded and diced
4 scallions, thinly sliced
1 Tbsp. vegetable oil
2 tsp. sesame oil
Juice of 1 lime
Chopped macadamia nuts, for garnish (optional)


PROCEDURE:

1. Cure the salmon: Mix the salt and sugar in a bowl. Place 2 long pieces of plastic wrap on a work surface, overlapping them to form a cross. Put half of the cilantro sprigs in the middle of the plastic wrap and top with half of the salt-sugar mixture. Press the salmon into the mixture, making sure the bottom of the fish is covered with salt and sugar. Sprinkle the salmon with the remaining salt-sugar mixture and rub it in, then place the rest of the cilantro on top. Wrap tightly in the plastic and refrigerate for 24 hours.


2. The next day, unwrap the salmon, rinse off the salt and pat dry. Cut into ¼-to-1/2- inch cubes.


3. Make the salad: Toss the salmon, cilantro, tomatoes, scallions, vegetable and sesame oils and lime juice in a bowl. (Traditionally, the cured salmon is flaked and ‘massaged’ with the other ingredients by hand.) Garnish the salad with chopped macadamia nuts, if desired.


VARIATIONS:

*I omitted jalapenos in this particular recipe because I didn’t want the spice, but if you do feel free to add 1 jalapeno or Serrano pepper, seeded and diced.

*Play around with the protein in this recipe: lomi lomi is traditional with salmon, but try shrimp or scallops and you have a tasty alternative.

*Also play around with the ingredients that you put into the salad: for a fruitier version add fresh diced pineapple and mango and you have another tasty alternative to the lomi lomi salmon salad.
