
Ernest Hemingway's favorite drink was the mojito. Classic, sweet, and refreshing - the rum based cocktail needs no improvement nor experimentation.
Apologies to Mr. Hemingway, who will roll over in his grave for what I'm going to propose, but I promise it's only because there was a rush on Bacardi at my local liquor store: I substituted tequila (blanco at first, but reposado gives it quite a unique flavor) and quickly discovered a new summer classic.

Ingredients:

Combine sugar, the leaves of 3 large mint sprigs, lime juice (juice all but the smallest wedge) and a splash of soda water in a cocktail shaker. Muddle until you can smell the mint being released and the sugar has had enough time to dissolve in the soda water. Put a small handful of ice into the shaker and shake until mixed. Strain into a highball glass filled at least halfway with ice. Top with soda water. Garnish with the remaining mint sprig and lime wedge.
