Gluten Free Blueberry Banana Corn Bread Recipe (original - Copyright 2009, Elizabeth Stein)
Ingredients:
1/2 cup millet flour
1/2 cup coconut flour
1/2 cup of gluten free cornmeal
1 tsp baking powder
3 ripe bananas
1 tsp vanilla
1 tsp cinnamon
1 organic egg
1/4 cup of maple syrup
1/2 cup olive oil
1 1/2 cup of blueberries
Directions:
Preheat oven to 375. In a food processor, combine bananas, vanilla, cinnamon, egg, maple syrup and olive oil. Set aside. In a separate bowl combine dry ingredients. Stir in wet ingredients. Fold in blueberries. Pour mixture into loaf pan. Bake for 40 minutes.
