Gluten Free Blueberry Banana Corn Bread

Blueberries are bountiful at the Union Square Greenmarket this week. The antioxidant rich berry is bursting with flavor, ready to fight free radicals in the body  Not only are blueberries rich in vitamin c, but also high in fiber with 4g per cup. A recent study shows that blueberries may even reduce abdominal fat.

Gluten Free Blueberry Banana Corn Bread Recipe (original - Copyright 2009, Elizabeth Stein)

Ingredients:

1/2 cup millet flour

1/2 cup coconut flour

1/2 cup of gluten free cornmeal

1 tsp baking powder

3 ripe bananas

1 tsp vanilla

1 tsp cinnamon

1 organic egg

1/4 cup of maple syrup

1/2 cup olive oil

1 1/2 cup of blueberries

Directions:

Preheat oven to 375.  In a food processor, combine bananas, vanilla, cinnamon, egg, maple syrup and olive oil.  Set aside. In a separate bowl combine dry ingredients.  Stir in wet ingredients.  Fold in blueberries.  Pour mixture into loaf pan.  Bake for 40 minutes.
