If you were lucky, you were at the GrillSmith when a Sommelier was present.  The female hosts were both very pleasant and friendly. The wait for the dining room tables were shorter than outside. The lounge and waiting area were full of chatty parties.
The menu was Chef-created with fusion influences. It was built to be a traditional American restaurant. Wine list was not big but it was impressive with aged bottles of red. Tomato Caprese Stack was composed of layered ripe beefsteak tomatoes and whole milk mozzarella topped with a balsamic vinegar reduction, and olive oil. The lightness of the dish was composed fully under my palate with fresh basil leaves. Lemon Feta Chicken Grilled chicken breast topped with artichoke hearts, sun dried-tomatoes, and crumbled feta cheese finished with a lemon butter white wine reduction. The Bacardi mojito was one of the best for the area.
It was an open kitchen. The chef was expediting. The servers seemed calm under pressure. All tables were full. The hotline had no empty spot for more tickets. Food came out on time with excellent temperature. Server assistants or bussers were not bilingual. Two out three I talked to did not speak a word of English. It delayed the service. They could have been offered to take English courses to adapt to the language.
