Vegetable grilling tips and recipes

The 4th of July is only a few days away and the forecast looks perfect (so far) for a cook out! Fire up the grill and read below for a basic recipe for a successful vegetarian cook-out that will leave you feeling like the grill-champion of the neighborhood!

First, let’s discuss some dos and don’ts of the vegetable-grilling world. Don’t attempt grilling veggies that have high water content such as celery, cucumbers, lettuce, or any other leafy-green types. Do select veggies that have some heft to them and will hold up on the open flame. Bell peppers are great, along with onions, eggplants, potatoes, squash, etc. Do spear up your veggies on kabobs before cooking so you don’t lose them to the fiery charcoal pit below. You can also wrap veggies in heavy tin foil, but this will lose most of the smoky flavoring that you would achieve with a kabob. Do marinade your veggies ahead of time. This cuts down on sticking (to the grill and each other), and increases flavor. Spraying the grill with cooking spray or rubbing oil on it ahead of cooking time is a must as well. Don’t let your veggies over-cook. Vegetables cook rather quickly and can char easily if not watched. Nobody likes an overly-scorched kabob.

Next, let’s move on to recipes. There are a million vegetarian-friendly things that can be thrown on a grill and eaten, but we are just going to focus on a few. Here is a list of links to great grill recipes that will enhance any 4th of July party plate.

Finally, a few more tips. Beware of buying pre-made meat-alternatives such a veggie burgers and veggie dogs and throwing them on the grill. Truth be told, they weren’t all made to be grilled so they may not hold up over an open flame.
