Blueberry and black tea muffins

yummy, good for you blueberries

Tired of the usual blueberry muffins? Shake things up by adding black tea to the batter.  Your blueberry muffins will never be the same again!

Ingredients:

  • 2 cups all purpose flour
  • 2 t baking powder
  • ½ t salt
  • ½ cup unsweetened applesauce
  • ¾ cup sugar
  • 1 egg
  • 1/3 cup brewed black tea
  • 1/4 cup milk
  • 2 cups blueberries (fresh or frozen)

  Topping:

  • 1/2 cup brown sugar
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon cinnamon
  • 1/4 cup butter

 Directions:

Sift together flour, baking powder and salt. Combine applesauce and sugar.  Add egg, tea and milk to applesauce mixture and mix well. Add dry ingredients then fold in the blueberries. Pour batter in greased and floured muffin pans (or line pans with baking cups). To make the topping, mix all ingredients with a fork. Sprinkle over muffins.  Bake at  375 degrees F for 30 minutes or until golden brown.  Enjoy!
