First Lady Michelle Obama has instructed the White House chef to serve desesert only on weekends. That guideline fits right in with her focus on feeding the President and children healthy foods. One of the White House's chefs told People magazine that the Obamas keep dinners simple, with main entrees such as tacos or burgers. However, those sometimes-fattening foods are made lower in calorie and fat by using lean beef and low-sugar ketchup.
Previously dishing up delicacies for Michelle Obama and her family as their personal chef, Sam Kass is both an assistant chef at the White House and the "food initative coordinator." Part of that job description goes beyond serving healthy foods to the First Lady, the President, and their children: Sam also works on school-lunch legislation.
The First Lady believes in moderation rather than excluding foods forever. For example, she told a Women's Health magazine reporter that French fries rankd as her "favorite food in the whole world. If I could, I’d eat them at every meal — but I can’t. My whole thing is moderation. If I make good, healthy choices most of the time, then having what I love every once in a while won’t hurt.”
