Getting Your Child to Eat Veggies
Give your kids a break. How many adults like Brussels sprouts and cauliflower? The trick is making vegetables taste good, often by sneaking them into other recipes. Here is what works in my family.
Bugs on a log: Spoon peanut butter onto a celery “log,” and top with raisin “bugs.”
Cucumber sandwiches: Spread cream cheese onto a slice of pumpernickel bread. Then add slices of cucumber. Top with another slice of bread and cream cheese. Cut in quarters.
Fruit smoothies: Mix two cups of fruit, one serving of yogurt, and a carrot in the blender. Add a few ice chips to chill it.
Quick breads: Pumpkin bread, zucchini bread, carrot bread…. If you pick the right recipe, these veggies become a dessert instead of a chore. My family likes Betty Crocker’s quick bread recipes the best.
Ranch dip: Squirt salad dressing into a cup and hand your child a broccoli floret. Sometimes my son just licks off the ranch dip, but every now and then, he takes a bite!
Spaghetti: Add one can of drained green beans or diced tomatoes to the sauce.
If none of this works, try The Sneaky Chef, by Missy Chase Lapine. The author lays out how to slip cauliflower into macaroni and cheese, eggplant into brownies, and, well, you get the idea.
