After I experimented with Earl Grey tea in my article Earl Grey Goodies, I wanted to see what else would taste yummy with the tea. I love having quick breads or tea breads around for easy breakfasts, snacks, or to serve when friends stop by. This bread is super sweet, moist and has only the slight taste of the tea. It is perfect with a cup of tea or coffee.

 

1 stick butter, softened
¾ cup sugar
2 eggs
1 teaspoon vanilla extract
1 ½ cups flour
1 teaspoon baking powder
1 tablespoon Earl Grey tea
½ cup milk
1 teaspoon lemon juice

1. Cream the butter and sugar together. Add the eggs, one at a time, mixing after each addition.
2. Mix in the vanilla extract.
3. Stir together flour, baking powder and tea leaves.
4. Add the dry ingredients to the butter mixture alternately with the milk, beginning and ending with the dry.
5. Stir in the lemon juice.
6. Pour the batter into a small loaf pan and bake at 350 for 50-60 minutes or until a wooden stick inserted in the middle comes out clean.
