Seems the time is ripe for cheese culture and cheese heads are loving it. If you're in the Boston area, we have several new resources to delight your urge for the fresh, bloomy, ripe, washed-rind, hard aged, whatever you crave...

Culture - the word on Cheese.

A new quarterly magazine, complete with porn-style centerfold. The first issue's centerfold lists turn ons (Belgian style ales) and turn offs (red wines) and superstitions (plastic wrap). Just like a centerfold, isn't it? Culture also  highlights another resource...

La Laiterie at Farmstead in Providence, RI - a cheese shop, a bistro, run by Matt and Kate Jennings. Culture's debut issue has an article by Matt who shares favorite recipes for Mac & Cheese and Gougeres and more.

Formaggio Kitchen, South End Formaggio and Ihsan Gurdal. Awarded the Chevalier du Merite Agricole is akin to a knighthood, granted for his remarkable cheese knowledge and his promotion of French cheeses through his work.

The next time you're treating yourself to a nice dinner out, skip the ubiquitous molten chocolate cake and opt for the cheese course instead. It's a wonderful way to end the meal and we're in a good spot to enjoy some very good cheeses and pairings. Some of the restaurants here that include a cheese course include: L'Espalier (now at the Mandarin Oriental), Troquet, La Voile.
