A recent stroll through the farmer’s market may have entailed a lot of head turning and drool wiping at this precious time of the summer. The glowing gradient of yellow, orange, red and white masses, seem to gracefully pull one in for a closer look, touch and smell. It is precisely the time for peaches.

One sweet juicy bite is all that one needs to understand that this lovely season is not worth missing out on.A myriad of varieties make for fun tasting adventures of this voluptuous fruit. While unadulterated peaches are perfectly peachy, oven roasted Amaretto soaked peaches make for a luscious seasonal dessert.

Oven Roasted Amaretto Soaked Peaches

Ingredients
(serves 7)
4 large fresh peaches (halved & pitted)
2 1/2 cups Amaretto Italian liquor
2 tablespoons vanilla
1/4 cup chopped walnuts
Ground Cinnamon (to taste)
Honey (to taste)

Method of Preparation
Place the Peach halves in a large Ziploc bag or bowl and pour in the Amaretto and vanilla. Allow the fruit to soak for at least 30 min. At baking time place peaches and juices into a dish, sprinkle with walnuts, cinnamon and drizzle with honey. Roast the peaches for about 10-15 minutes, or until tender and toasted on top.

Serve the hot peaches with plain yogurt, frozen yogurt or French vanilla ice cream on an indulgent occasion.
