Outrageous oat crusted chicken or turkey with rosemary and lemon
Making a commitment to follow a healthier lifestyle isn’t always the easiest thing to do. The one common problem that most people have is actually sticking to their program, particularly when it comes to nutrition. Sometimes it becomes a real tough battle to eat healthy, especially if we run out of options to make our food taste good. But imagine what it would be like if we had a plentiful variety of recipes to utilize and they all were tasty and delicious. We don’t have to suffer through boring, dry and tasteless meals for the rest of our lives. There is a better way and it’s all about getting creative in the kitchen. Try taking your favorite recipes and simply modify them to add healthier ingredients and lower the calories. With that said the following recipe will surely knock your socks off and stimulate your taste buds. If you are tired of boring chicken breast or plain old turkey this recipe is guaranteed to satisfy.

Ingredients
6 – 8 chicken breasts or turkey cutlets (if using chicken breast either slice it thinner or pound it slightly)
4 egg whites
1 tbsp. of minced garlic
4 sprigs of rosemary
1 tbsp. of parmesan cheese

Salt and Pepper
Olive oil
1 cup of oat flour (see recipe for this below)
Instructions
- Start off with either old fashioned oats or quick oats. Place them in a food processor. Grind until you have a flour-like consistency and its equivalent to 1 cup. This is a great and creative way to make your own flour and it’s very good for you too.
- Add the rosemary, parmesan cheese and 1tsp. of salt and pepper into the food processor with the flour and grind for about 30 seconds. Place the mixture onto a flat plate to get it ready for coating your chicken or turkey.
- In a bowl, mix egg whites, lemon, garlic and salt and pepper together.
- Place your chicken or turkey into the bowl, with the egg white mixture. Next take it out and place it on a flat plate.
- Instead of dredging it directly into the flour, just take a spoon and sprinkle the flour mixture on both sides of the poultry. If you’re not concerned about watching your carbohydrates you can go ahead and dredge it directly into the flour.
- Heat your frying pan first to get it warm and then add approximately 2 tablespoons of olive oil. Let your oil get warm before you place your poultry into the frying pan. This is a general rule of thumb to go by if you don’t want anything to stick to the pan.
- Fry each side for approximately 5 – 10 minutes. Make sure to cover with a lid to help it cook faster and to also lock in some of the moisture.
