Bacon fried breakfast sandwich
Do you crave a fast food breakfast sandwich when you're not planning to do anything but sit around in your underwear all day? Long commute ahead with no portable food in sight? Feel like frying something in bacon fat? If you answered yes to any of these questions, one recipe can be your solution.
2 eggs
1 – 1 ½ tablespoons bacon fat
2 mini bagels
3 slices sharp cheddar
Heat the bacon fat in a skillet. This will heat up more quickly than butter, so if you're used to cooking your eggs in butter, consider keeping the heat a bit lower than usual.
Crack your eggs directly into the skillet and fry as usual. A note to over-easy enthusiasts: these eggs are going into a sandwich. Do you really want egg yolk all over your hands? If you're fine with that, carry on as usual, but I strongly recommend going for at least over-medium. Ordinarily I don't advise over-frying eggs, as the crispy burnt layer that can result isn't usually tasty. But when you're frying with bacon fat, that layer will taste like bacon.
While the eggs are cooking, layer your cheese onto half of the mini bagels. I prefer to leave my bagel untoasted, but that's really up to you.
Of course, if you really want to clog up those arteries, you could slap a breakfast meat in the mix. Me? I think cheese and eggs that taste like bacon are just about right.
