
As if having fancy-pants Hubert Keller to headline this weekend's Taste of St. Louis wasn't enough, Monday brings to town another big-name foodie celebrity. Joel Salatin -- the locavore evangelist who gained national celebrity in Michael Pollan's book, The Omnivore's Dilemma and this year's muckraking documentary Food, Inc -- will be speaking Monday night at Webster University.
As the owner of Polyface Farms in rural Virginia, Salatin has been an outspoken advocate for organically-raised food that is produced in harmony with nature. In sharp contrast to large-scale factory farming that generates loads of waste and less-than ideal conditions for animals and the subsequent meat they produce, Salatin practices pasture-based methods that allow the most natural feeding, fertilizing and processing possible.
