Super Egg Scramble

 

Packed well within the small oval shell of a chicken’s egg is a bounty of delicious nutrition. But beware, not all eggs are created equal. Organic eggs, by far, pack a higher nutrition punch per serving. As with fruits and vegetables, the healthier the food source, the healthier the food.

Some of the nutrients you can look forward to in your eggs are some ever important vitamins such as A, D, B2, B5 & B12, as well as folic acid, and, of course, protein. If you are concerned about cholesterol, get the facts and then make the decision that is best for your dietary needs.

Rather than scrambling your head with nutritional facts and figures, here’s one of my favorite recipes. Food is best enjoyed, whole, organic and delicious.

Super Egg Scramble
2 eggs
1/8 cup chopped red or sweet onions, whatever is in season
1 clove chopped garlic
1/2 cup chopped broccoli
1/2 cup chopped heirloom tomatoes
1 Tablespoon healthy fat for cooking (extra virgin olive oil, coconut oil, organic butter)
Sea salt to taste
White pepper to taste

note: The amounts given above are per person. This recipe scales up very easily, simply multiply the amounts above by the amount of people to be served.

Lightly beat eggs with a dash of white pepper. When the pepper is incorporated add the broccoli and tomatoes. Mix gently and set aside. Warm oil over medium-high heat. Lightly sauté onions and garlic with a dash of salt until the onions are just turning translucent. Add egg mixture and let cook until bottom is a light, golden brown, approximately three minutes. Flip, or using a spatula, break into pieces and flip each piece until the entire “patty” is turned over. Bake until the bottom is a light, golden brown. About one to two minutes. Turn out onto a plate and serve hot.

This is a great recipe for using your creativity. You can change the vegetables for whatever is in season. I love to include avocado, spinach, or ever summer squash. A perfect staple, this simple and delicious recipe is great for entertaining or enjoying on your own. It’s also a great menu item for anytime of year, so you can always keep to the seasons.
