This is a great light, fluffy and inexpensive cake that is perfect for a summer treat and it's failure-proof!!!

The secret is in the beating.  Use your mixer and beat the eggs until they are light and lemon-colored as you can get them.  Then beat in sugar, making sure each addition is dissolved before you add more.  Serve on a warm afternoon with frosty glasses of iced coffee.  What a treat.

  • 2 Eggs
  • 1/4 teaspoon salt
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 1/2 cup milk
  • 1 tablespoon butter
  • 1 cup sifted, enriched flour
  • 1 teaspoon baking powder
  • 1 tablespoon grated orange rind
  • 3 tablespoon sugar

Beat eggs until very light and fluffy.  Beat in salt, sugar and vanilla.  Heat milk and butter to boiling point; beat in.  Mix and sift flour and baking powder; beat in.  Bake in greased, 8 inch square cake pan in moderate oven, 350*F.  25 to 30 minutes.  Sprinkle while warm with orange rind remaining sugar.
