
Next to "Strawberry fields"... the next best or maybe equal is the "blueberry fields". The Beatles sang about "strawberry fields, forever", but it was Willy Wonka that made the blueberry HUGE! Yes, it was Violet Beauregarde, who ate the chewing gum that tasted like food. By the time she got to the dessert, blueberry pie, she started to turn purple and grew to be a big blueberry. With that being said, today we celebrate "National Pick a blueberry" day.
Blueberries, are one of natures most nutritious berries. Blueberries are full of antioxidants that are known to fight off cancers and they are good for your heart, too. Plus, they stimulate the brain's memory functions and they taste great! Blueberries are grown on bushes and this is the peak time of year, at least here in North America, where over 90% of the worlds blueberries are grown. As our season ends the season continues up North and continues into Canada. It is a good idea, while they are in season to gather up as many as possible and "can" them, preserve them, freeze them (do not wash at all)... do whatever it takes, so that you can continue to enjoy them into the winter season.
Today we will make a blueberry pie, in honor of Violet Beauregarde, the blueberry girl... and National Blueberry month. To start, you need a good pie crust recipe, after checking out this link, you will have a better understanding on how pie crust are made
Blueberry Pie recipe...
1 - pie crust recipe for 9 inch pie, for top and bottom
Filling...
5 cups fresh blueberries, tossed in 2 Tablespoons of lemon or keylime juice
1/2 to 1 - cup sugar (depending on your taste)
1/2 - cup flour
pinch of Kosher salt
1/2 teaspoon - cinnamon plus a dash of nutmeg
2-3 Tablespoons butter, cut into tiny pieces
Egg wash
1 egg
2 - Tablespoons water (or cream)
White course sugar (optional)
Take your blueberries tossed in your citrus juice and set aside. Next mix your dry ingredients together, set aside. Roll out your pastry and line your "non-stick" sprayed deep dish pie tin or plate. Set aside in the freezer, for at least one half hour. Roll out your other half of the dough and on a sheet pan, set aside in the refridgerator. Once the pie dough is set and frozen, pre-heat your oven to 400 degrees.
Take your frozen pie crust and fill with the following... take your blueberries and your dry ingredients and toss them all together. Pour this mixture into your pie shell. Dot with the butter pieces. Next take your egg and water and mix together to make an egg wash. Brush the edges of your pie crust and then take the remaining pie crust from the refridgerator and place on top, crimping the edges to make a nice edge and to seal the pie crust together. Next take the egg wash and brush the top of the pie and then sprikle some white course sugar on top, to give it a sweet, sparkly finish.
You are definitely smart if you make this pie or at least after you eat the pie (blueberries are good for your brain, remember?)... with that in mind (yes, your mind) make several of these pies and go out and share them with everyone you meet. It is a great feeling to make something, like this pie and to go out and share it with others. This is a simple yet very effective way to spread good cheer, good pie and good feelings! Life is a gift, so it is up to us to give back.
