Apple turnover recipe... for "National apple turnover" day

Let them cool a bit, so you don't burn your mouth!

If you are still in the celebrating mood, today is National "Apple turnover" day.  Apples are a big thing, you know, all American apple pie... well a turnover is kind of like a pie folded up so you can hold it in your hand.  So, it only figures that an apple turnover would get a bit of the "spotlight", so to say!

Turnovers, like mentioned earlier, are portable or convenience foods.  There are sweet and savory types of turnovers, but today we will celebrate and do a sweet turnover... the apple turnover.  Sweet turnovers use a short type pastry, similar again to a pie dough or you can use puff pastry.  With this recipe, it is similar to my all mixed up apple pie, in the fact that I like to use a variety of apples.  There is always some Granny Smith apples, for the tartness.  Then it is good to use a firm, crisp sweet apple like Gala, Red delicious... today we will cheat a bit and use store bought frozen puff pastry.  Like mentioned before, you can make a short pastry dough, sweet or not, if you are up to it. 

Apple Turnover recipe

  • 4 apples - (2 Granny, 1 Gala, 1 red delicious) peeled, cored and sliced
  • 2 tablespoons butter or more
  • 1 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 1 (17.25 ounce) package frozen puff pastry sheets, thawed but refrigerated

Glaze

  • 1 cup confectioners' sugar
  • 1 tablespoon milk
  • 1 teaspoon vanilla extract

DIRECTIONS

  1. Do step two first... then act fast and cut apples as directed above, adding the sliced apples to the pan with melted butter as you cut.  This way you don't have to soak the apples in lemon water.  That way your apples won't get soggy.
  2. Melt butter in a large skillet over medium heat.   Cook the apples and stir for about 2 minutes.  Add brown sugar, and cinnamon, and cook, stirring, for 2 more minutes.  Stir together cornstarch and 1 tablespoon water.  Pour into the skillet, and mix well.  Cook for another minute, or until sauce has thickened.  Remove from heat to cool slightly.
  3. Preheat the oven to 400 degrees F (200 degrees C).
  4. Unfold puff pastry sheets, and repair any cracks by pressing them back together.  Trim each sheet into a square.  Then cut each larger square into 4 smaller squares.  Spoon apples onto the center of each squares.  Fold over from corner to corner into a triangle shape, and press edges together with a fork, to seal.  Place turnovers on a baking sheet, leaving about 1 inch between them.
  5. Bake for 25 minutes in the preheated oven, until turnovers are puffed and lightly browned.  Cool completely before glazing.
  6. To make the glaze, mix together the confectioners' sugar, milk and vanilla in a small bowl.  Adjust the thickness by adding more sugar or milk if necessary.  Drizzle glaze over the cooled turnovers.

Now that is something great to enjoy today.  Then you could go out and share those turnovers with everyone you can.  You have the "freedom" to do that... since we just celebrated Forth of July!  Plus, just think of the huge grins you will create once you give someone a fresh baked turnover... they will be grinning from ear to ear or from "sea to shining sea"!

Tomorrow is the beginning of a "prosperous new week".  Take advantage of a new day... a new beginning!  That is the gift we receive each day that we are blessed with life... a new beginning.  No matter what has happened, that was the past and we cannot change that.  What we can do though is change our future as long as we change our actions.  Create the actions that you need to in order to turn your dreams into reality!  Peace my friends, now go make these turnovers... just try not to eat them all before you go out and share them!
