"Peace maker"... Oyster Po Boy recipe

OOOOeeee, I garontee' this is good!

Late last night the Florida Gulf coast got slammed with a huge thunder storm.  For about an hour or so the lighting, thunder and hard rains polverized the area.  In the midst of the storm it looked like it would never clear up.  Yet, this morning when all was settled and the sun rose from the east... it was a cool, refreshing morning with a beautiful sunrise showering its sunrays brilliantly across the sky.  Life is the same in most cases, so whenever you are experiencing a storm in your life, relax knowing that a brilliant new day lies ahead of you.  A new day to experience more of life's beautiful adventures.

Food is also quite an adventure, if we choose it to be.  There is an endless variety of food styles, seasonings and foods itself.  Everything from seafood to meats to vegetables and everything in between... ahhhh, in between!  It could be in between the rocks, in between the shells... hey it could even be "in between" two slices of bread.  Maybe it could be a little of both!  Today is a great day to make a New Orleans style "Oyster Po Boy".... OOOOOOeeeeee, now that sounds gooood!

First off, between the shells needs to be some clean, certified oysters.  With all those poachers out there, you don't want to get any bad oysters.  Now if you don't want to go hunting for the oysters yourself, you could always go to your favorite seafood market, like Ward's seafood and pick up a gallon or so of shucked oysters.  Hey, at this point, why bother shucking them yourself, unless you are into a little "cruel and unusual " punishment!!!  Next is between two halves of some French bread.  Here is the rest of the recipe for a good ole' Nawlin's style Oyster Po Boy ....

Deep-frying seafood is still considered the number one technique in the south. Even with the concerns that many have with deep fat frying, they still expect to eat seafood in this manner when visiting Cajun country.  Personally, the oyster po-boy or "peace maker" as it is called in New Orleans is the best of all deep-fried seafood recipes.

INGREDIENTS: 6 servings (so you could divide this in half or by thirds; except for eggwash, leave the same)

    * 4 dozen fresh oysters
    * 6 (10-inch) po-boy loaves

EGG WASH:

    * 1 egg, beaten
    * 1 cup milk
    * 1 cup water
    * 2 tbsps Creole mustard
    * 1 tbsp yellow mustard
    * salt & cracked black pepper to taste

BREADING:

    * 1 1/2 cups yellow corn meal
    * 1 1/2 cups yellow corn flour
    * 2 tbsps granulated garlic
    * Oil for deep frying

DRESSING:

    * 3 cups Remoulade slaw (see recipe)
    * 18 thin slices of tomato
    * Spicy ketchup

METHOD:
Preheat oven to 375 degrees F.  Using a home style deep fryer such as a Fry Daddy, heat oil according to manufacturer's directions.  Slice the po-boy bread lengthwise and place on a large cookie sheet. Set aside.  In a mixing bowl, combine egg, milk, water, mustards and season to taste using salt and pepper.  In a separate mixing bowl, combine corn meal, yellow corn flour, garlic and season to taste using salt and pepper.  Set aside.  When ready to prepare the po-boys, create Remoulade sauce and slaw (see recipe) and set aside.  Place the bread in the oven and turn off the heat; this will allow the bread to become crispy and warm.  Dip oysters, six at a time, in the egg batter and then into the corn meal, corn flour mixture.  Place in the deep fryer at 365 degrees F and cook until oysters float, approximately three minutes.  Remove and drain and keep warm. Continue until all oysters are fried.  While oysters are cooking, remove po-boy bread from the oven and place Remoulade slaw and tomato slices on the bottom side of the bread and the spicy ketchup on the top side .  Place six oysters over the slaw and top with the other po-boy half.  Secure with toothpicks and slice into two equal halves.  Serve hot.

O.K. as you can see, the recipe is enough so that you can invite some old friends or some new friends over to help you devour those mighty tasty Po boy's.  Heck, you might invite over someone that you have had a dispute with... these Po boys are called the "Peace makers"!!!  With that said,  just get ready to experience a major explosion of flavors in your mouth... hey, you just descibed what a "MJM Mouthgasm" is... an explosion of flavors in your mouth.
