If you are a child of the Sixties, flashbacks might be a "common thing".  It's all groovy, (wo)man!  One thing for sure, it is not good to flashback to the past, if it is going to be negative or destructive to your self esteem.  Yes, it is good to make sure you are not going to repeat past situations, if they are not beneficial to you or someone else, but why remind yourself of something that happened before, especially if you are going to "feel" bad or upset.  Life is a journey and if you want to go beyond your "Norm", if you want to grow to be better, than you have to realize that life's journey is a series of challenges and test.  We never fail as humans, unless we don't try!~  Not succeeding at a goal or task is not failure.  In many cases, many humans have attempted their goals or desires, only to get "slapped" down hundreds, even thousands of times before "succeeding".  We can name many... Benjamin Franklin, Bill Gates, Steve Jobs, Colonel Sanders, Hank Aaron... the list is very long and that should be very encouraging.  You see, if all of those people can be so persistent and succeed than that means YOU can succeed too!  Sometimes success is just a few inches away, just another swing at the bat, just one more "pitch" to an investor!  So don't be discouraged if anything be fired up because you are just about ready to strike "Gold", my friends.

Now today we are going to make a recipe of the past, but since it was so long ago, many of you might not have been a reader of the Examiner at the time.  Because tomorrow, the 21st of October is National Pumpkin Cheesecake day, we are going to celebrate with my scrumptious pumpkin Frangelico cheesecake.  It is made with a gingersnap crust and it will definitely create a major "MJM Mouthgasm".  Get ready to make this so you can celebrate this holiday in style...

PUMPKIN SPICE FRANGELICO CHEESECAKE

Man, this is one “damn” good recipe here.  Instead of the traditional pumpkin pie during the holidays, use this recipe instead and Mighty Joe Mango garontee’s you will be the hit of the dinner party, sharing plenty of MJM “Mouthgasms”!


32 oz. (4 – 8 oz. Packages) Good quality cream cheese
1 ½ - cups granulated sugar

4 - eggs
2 – teaspoons pure vanilla extract
 1 - teaspoons lemon juice or O.J.

3 - Tablespoons flour
3 - Tablespoons cornstarch
2 – teaspoons cinnamon
¼ - teaspoon nutmeg
½ - teaspoon allspice
¼ - teaspoon cloves

4 oz. (1 stick) - unsalted butter melted then cooled slightly

1 - pint (16 oz.) sour cream
3 cups – pumpkin puree

2 oz. Frangelico liquor
Crust…
2 ½ - cups Ginger snap crumbs
4 - Tablespoon Melted butter
½ - cup sugar (optional)

Melt the butter and then gradually add to the ginger snap crumb mixture.  Do not add to much butter. Once the mixture is damp but not saturated put into non-stick sprayed and lined cake pan.  Bake for about five to ten minutes, in a three hundred twenty five-degree oven.  Remove from oven and reserve for cheesecake batter.

Beat the cream cheese in a large mixing bowl until smooth.  Gradually blend in the sugar.  Mix thoroughly.  Next, add the eggs, vanilla and citrus juice and blend well. Next, sift in the flour, spices and the cornstarch and blend well.   Add the melted butter and blend well. Next, add the sour cream and blend well.  Finally add the Frangelico and mix until thoroughly incorporated.


In a spring form or regular professional quality cake pan, with three inch sides, that has been “non-stick sprayed” and lined with parchment paper or wax paper and a crust already pressed in and par baked, pour in the batter.  Place the cake into a water bath and bake in a three twenty five-degree oven, for approximately, one hour and fifteen minutes or until the cheesecake is firm to the touch. Turn off the oven and leave the cake in the oven with door closed until cooled down.  Refrigerate for four hours minimum, preferably overnight.  Once thoroughly chilled, remove from the pan and place on a serving plate.  Here are some tips on how to slice a cheesecake...

Serve plain with a dollop of fresh whipped cream flavored with a little of the Frangelico.
 

You know the routine by now... you gotta' share this great cheesecake with as many people as you can!  So grab a bunch of paper plates, get a sharp knife and be near a sink with some hot water and slice up that cheesecake.  Then go to work, go to a friends house or go somewhere where you can share this delicious treat.  You will definitely create a ton of smiles and plenty of "lip smackin' " too!


Life is meant to share with others, to create little burst of "happiness" where ever you go!  Don't "fall" back into bad habits or situations.  Press on to a great future, a future that you create with the images in your mind!  And what a mind you have... yes, you are one great human being.  Be proud of who you are... now go look in the mirror, it is time to tell that wonderful face staring back at you... "Hey you, I love you"!   Now go and make that cheesecake and then go spread some cheer!  Peace my friends... until next time, May the life you live be the life you love!
