Who's got the cookies!!!

Soft and chewy chocolate chip cookies…

O.K. Mango-heads, I have been working on this recipe for years… literally!  I know, you are saying…”Mango, what in the hell has taken you so long, I mean it is just a chocolate chip cookie!!!”  Well, they are not just chocolate chip cookies.  They are “chocolate chip cookies”!!!  Yep, this recipe is a delicate blend of ingredients designed to create a soft and chewy cookie with a slightly crispy edge.  As Mrs. Fields once stated…” the perfect cookie has a little bit of a crisp edge with a soft and chewy center”.  She is the cookie expert, too!   So over the years I have worked on this with no success until lately.   Then… whammo!   It hit me over the head and I did a little work and “Viola” … the perfect cookie!

So get ready for you know what… that’s right folks, it is time for a major “MJM mouthgasm”!!!

Here’s the recipe…

1 ½ cups – unsalted butter, room temp.

1 ¼ cup – sugar
1 ¼ cup – light brown sugar

2 - eggs
1 - Tablespoon Vanilla

4 ¼ - cups unbleached A.P. flour
1 – teaspoon baking soda
1 – teaspoon baking powder
1 – teaspoon salt

1 – 12 oz. Package chocolate chips, chunks, mini or white chocolate chips

Pre-heat oven to 375 degrees

Cream butter.  Blend in both sugars, incorporating thoroughly.  Next blend in egg mixture.  Blend well.  Sift dry ingredients together then add to the dough mixture.  Incorporate well.  Finally, add the chocolate chips and blend well. 

On a parchment or wax paper lined cookie sheet pan, using a 2 oz. Scoop, form 6 dough balls on a half sheet pan / 12 on a full sheet pan (commercial).  Cover with another sheet of wax paper and slightly press down on the dough balls making dough “disks”.  Place cookies into preheated oven and bake about 9 minutes.  Open oven and rotate pan 180 degrees and bake for another 4 minutes or until golden on edges and dry looking on top.  Remove and let cool on cookie sheet. 

Grab a cup of coffee, a glass of milk or a cup of hot tea, whatever your beverage of choice is, scoop up a cookie and get ready for your daily “MJM Mouthgasm”!!!  Yea, that's right Mango-heads... get the rest of the cookies and pass them out to the first people you see... it could be your neighbor, a stranger on the street, the garbage men, the mail person... whom ever it is you will brighten up their day alittle and you will be spreading peace and good cheer!   Then afterwards go look in a mirror and tell that beautiful face starring back at you... "Hey I love you"!  Until next time... Peace!
