If you live near anyone who has a garden with cucumbers in it, you know that in Utah we've had a bumper crop this year. And now with the tomatoes coming on, you are probably looking for creative ways to prepare your bounty so that you don't get tired of it before the season is over. Here is a great recipe to use both tomatoes and cucumbers, plus basil if you've grown that too. This is a great potluck dish, so if you've got a Labor day picnic this weekend, here's your fantastic recipe.
Tomato Cucumber Salad with Basil
6 ripe tomatoes, diced
1 large cucumber, diced
3 Tb. balsamic vinegar
6 Tb. olive oil
1/2 tsp salt
pepper to taste
1/4 cup chopped fresh basil leaves or about 1 T. dried basil
Place diced tomatoes and cucumber in a large bowl. Let mixture sit for 10 minutes; drain off excess tomato juice. In another bowl, add vinegar and slowly whisk in the olive oil; add salt, pepper and basil. Add dressing to the vegetables adn toss well. Chill and serve on a bed of lettuce, or alone.
