Stir-fried zucchini and squash recipe

Fresh from the garden

More squash and zucchini than you can handle? After you've given away all you can, make sure you keep some on hand to make this, fast, easy, and delicious dish.

Stir-fried Zucchini and Yellow Squash

1 medium yellow squash, cubed
1 medium zucchini, cubed
1/4 cup chopped onion
2 T olive or vegetable oil
salt and pepper to taste
1 T lemon pepper seasoning
2 tsp. soy sauce
1/2 tsp. garlic powder
1/2 lb spaghetti, cooked or 2 cups cooked rice

Heat oil in skillet over medium heat. Add vegetables and seasonings. Cover, but stir frequently to avoid scorching. Cooking according to how you like your vegetables, about 10 minutes for firm, and 15 minutes for soft. Serve over pasta or rice.

For more variety try adding thin carrot straws, 1/4 head chopped cabbage, one green bell pepper, or two diced chicken breasts. If you don't have lemon pepper, it's also good with about 1 T lemon juice squeezed over it instead, or go here for a make your own verson of lemon pepper.
