If you are wondering what to do with the turkey leftovers, here is my favorite way to eat them. It's almost better than Thanksgiving Dinner.

Left-over Turkey Pot Pie

One double pie crust recipe
One to two cups of cooked turkey, chopped.
One cup of cooked stuffing
Left over mashed potatoes
Left over cranberries
Corn, peas, celery, and carrots, chopped (or not, this is not a strict recipe)
Left over gravy, about two cups
Salt and Pepper

Throw the vegetables, salt, pepper, and gravy in a pot. If you need more liquid, just add a little water. When the vegetable get tender, add the turkey and cook until the turkey is warm. Your filling should be about the consistency of gravy. Pour the filling into your pie crust. Sprinkle with stuffing. Spread mashed potatoes over the top. Spread cranberry sauce sparingly over the top of the mashed potatoes. Dot with butter, and cover with top crust. Bake at about 375 degrees, until the crust is done, about 40 minutes. Enjoy.
