Guacamole is so easy to make and so delicious. It may actually surprise you, if you’ve never made it how easy it is. The first thing to do when you go to the store and pick your avocados is to pick ripe avocados. When you pick up an avocado press into the skin. It should be soft and should not be hard. If it’s too soft and feels mushy it’s over ripe. It should feel about the same as pushing your thumb into your thigh. The other trick with avocados is getting the pit out. Slice the avocado from the stem top to the bottom in ½. Twist to release from the pit and taking your knife, in a swift motion, pop the blade into the center of the pit, twist and the avocado should come tight out. Taking a spoon, scoop out the meat from the skin and place in a bowl. Pour a couple of splashes of lime juice over the avocado to prevent browning.

Guacamole
2 large ripe avocados or 4 small
½ to ¾ cup of Chunky Salsa whatever temp you prefer med-hot
1tbsp lime juice
Using the instructions take avocados and mash with a fork or potato masher, mash until most of the chunks are gone. Add salsa and mix to the consistency you prefer, If you like it a little more lumpy like some people like their mashed potatoes then don’t over mash the avocado. If you want it real smooth, after mashing with a fork and adding salsa, use a hand blender to get more of an ice cream like texture.
Serve with tacos, burritos, as a dip for tortilla chips. It also goes great with sandwiches.
