Most people think of bagels and think breakfast, right? Wrong. There’s nothing better than a bagel sandwich for brunch. These sandwiches are big and if you’re like me I can only eat ½. So call your friends and invite them over for a Liquid Sunday Brunch. What is that you ask? It’s a fun get together I started about two years ago. One Sunday a month I invite 3 friends over for my LSB, plan my menu and we get together around 10 am. We sit down and chat over food and cocktails. After brunch is finished we play a game until about 3 or 4. It’s a lot of fun and it gives us a chance to catch up in a relaxed environment, just you and your friends enjoying a Sunday of food, cocktails and company.

Here is a typical LSB at my house:

Bagelicious Sarny
4 sourdough bagels
Cream Cheese (aluminum packet with zip close)
Alfalfa sprouts
Smoked ham (thin sliced for sandwiches)
Tomatoes
Avocado
Provolone or Swiss cheese (thin sliced for sandwiches)

• Split bagels in ½, coat both ½’s with a good amount of cream cheese. Helpful hint- before you start place cream cheese packet in a bowl of hot water, by the time you’re ready to make sandwiches cheese will be soft. On bottom 1/2 layer a couple of slices of ham, one slice of tomato, alfalfa sprouts, one slice of hard cheese, and two slices avocado. Helpful hint-cut avocado in half from stem to stern. Use a large knife with the blade horizontal to the pit. In a quick, semi hard motion, bring knife blade down into the pit and twist, it will come right out (be careful, make sure you are a good aim and don’t cut yourself, if unsure use a spoon and dig pit out) leaving the meat in the skin cut in ¼’s and use knife to pull the meat out of the skin.
  Put the top on and cut in ½.

I prefer to refrigerate them before my guests arrive and pull out of the fridge 5 minutes before serving, or you can also warm them in the micro to desired temp. Serve with fresh fruit.

Shake and serve over ice
Chunk of pineapple and cherry on tooth pick and orange slice on rim for garnish.
