If you are saving the carving of your jack-o-lantern for Halloween night, be sure you save those nutritious seeds! From our friends at Thompson Farms, we have another recipe for you. They may have a few more pumpkins in the field!   Call farm at  503-658-4640 to check.

Baked Pumpkin Seeds (salt-free)

  • 2 cups dried pumpkin seeds
  • 1 tblspoon oil
  • garlic powder
  • onion powder
  • chili powder

Preheat oven to 250 degrees., Toss seeds with oil and spread on foil lined cookie sheet. Sprinkle with powders  to taste. Bake 20 minutes  or until slightly browned.

My dentist's Baked Pumpkin Seeds

  • seeds from a large pumpkin
  • sea salt

Scoop out your pumpkin. Place seeds ( some membrane will get in) in  salted boiling water. Boil for 12 minutesand drain. The  membrane should be easy to clean from seeds  now. Place seeds only on foil lined cookie sheet  and bake at 400  degrees for  a few minutes until browned slightly. Do not leave oven and do not broil! Cool and eat.
