Strawberry nectarine parfait is delicious, healthy snack
If you have some fresh fruits on hand, one great way to enjoy them is in a parfait made with yogurt.
Surveying the fridge, we found some fresh strawberries still left over from the picking, as well as a ripe nectarine, some grapes, and a lemon. We layered the berries and nectarine slices with some nonfat Greek-style yogurt, which seems to have more substance than some of the other commercial yogurts.
Bowing to our eternal sweet tooth, however, we knew we had to sweeten it. It was a tossup – turbanado sugar, honey, or agave

syrup? The agave won, and just a spoonful provided just enough of the sweet taste we were looking for.
Agave, incidentally, is a good choice for vegans as a substitute for honey in recipes. We also shredded a little lemon rind into the mix, which provided a delightful aroma. Then we tossed some home-made granola on top to give it a nice crunch. The result was a ray of sunshine on another cloudy day here in RI.
Strawberry Nectarine Parfait
1 6-ounce container nonfat Greek yogurt
1 tablespoon organic agave syrup
3 or 4 strawberries, sliced
1 teaspoon grated fresh lemon rind (can also use orange or lime)
1/2 nectarine, diced
Granola or wheat germ for topping
Combine yogurt with agave sweetener. In tall slim glass, parfait glass, or wine glass, beginning with strawberries, layer fruit, then yogurt, fruit, then yogurt again, until you get to the top of the glass. Sprinkle on some granola or wheat germ if desired. Makes one serving.
