Chocolate cherry brownie recipe provides comfort food in cold weather

Fudgey brownies with plump cherries are true comfort food.

Listening to the weather report these days in Rhode Island can send us right to that fresh-baked pan of brownies. When Rhode Island weather gets raw and nasty, our need for comfort food increases with each dip of the thermometer, each gray day, each prediction of snow. High on the comfort gauge is, of course, chocolate.

 

The darker the chocolate, the better. These rich, fudgey wonders are made with unsweetened chocolate, and studded  with dried cherries, which plump up a bit during baking. Fruit and chocolate have a natural affinity for some reason. We don’t have to know why—just enjoy!!

 Dark Chocolate Cherry Brownies.

 1/2 cup (1 stick) butter

3 ounces, unsweetened chocolate

1-1/3 cups sugar

2 large eggs

1 teaspoon vanilla

1/2 cup flour

1/3 cup dried cherries

Cooking spray

 Preheat oven to 350 degrees F. Combine butter and chocolate in medium-large pan. Melt over low heat, stirring until smooth. Remove from heat and stir in eggs, vanilla, and flour. Fold in dried cherries. Spread batter in cooking-sprayed 8-inch square pan. Bake 25 to 30 minutes, or until firm. Serves 9 or 16, depending on size of squares. Freezes well.
