Food allergies easily go undiagnosed

Food allergies can be sneaky and can easily fly under the radar.  Sometimes food allergies cause immediate, severe reactions and are quickly identified. But other times, the symptoms are more mild and tolerable so they’re attributed to other factors or dismissed.

Food allergies and food sensitivities occur when the body has a reaction to certain foods; essentially an immune response is stimulated and inflammation and increased production of free-radicals (the bad guys that destroy healthy cells) occurs.

According the experts at Valley-based Derma Health Institute, if the food allergy or sensitivity is unidentified, a person could be consuming the culprit food regularly, leading to chronic activation of the immune system.  In some cases, the result can be major illnesses such as diabetes, obesity, cardiovascular disease, arthritis and dementia.  But in cases where a food sensitivity is more mild, it may manifest as the inability to lose weight, a bloating sensation, a stuffy nose, or other condition that seems fairly normal.
