Chicken Soup with Lentils and Barley
Makes: 6 Servings

What you will need
½ Cup dried brown lentils
1-tablespoon olive oil
1 cup sliced leeks
½ cup chopped red or green bell peppers
1 garlic clove, minced
5 cups of low-sodium chicken broth
½ teaspoon dried basil
½ teaspoon dried oregano
¼ teaspoon of dried rosemary
¼ teaspoon of black pepper
1 ½ cups of cooked chicken (1/2 a pound chopped)
1 ½ cups of sliced carrots
½ cup quick-cooking barely
1 can (16oz) no salt added diced tomatoes.
-Rinse the lentils under cold running water; drain and set aside
-Heat the olive oil in a large saucepan over a high heat; add leeks, bell pepper and garlic. Cook until it’s tender.
-Stir in chicken broth, basil, oregano, rosemary, black pepper and lentils. Bring this to a boil then reduce heat and let it simmer for 20 minutes.
-Add the chicken, carrots and barley. Simmer for an additional 20 minutes until carrots are tender. Lastly stir in undrained tomatoes; heat thoroughly and serve.
This fantastic meal is only 265 calories with 9g of fiber!
