Rich Chocolate almond mousse

This is a very sexy and sensuous chocolate dessert, for National Chocolate with Almonds Day.


Ingredients:

 

  • 2 ounce chocolate (milk or dark)
  • 2 tablespoons of flaked or chopped almonds
  • 2 eggs
  • 4 ounces of whipping cream


Put the chocolate into a Pyrex bowl, leaving a small amount for decorations.  Melt the chocolate over a saucepan of water.  Take off stove top.  Break the eggs and put the yolks into the melted chocolate.  Beat well until the mixture turns a lighter shade.

Whisk the egg whites in a separate bowl, until they form peaks, and then fold them into the chocolate mixture.  Allow the mixture to cool and start to set.

Whip the cream until it is firm and then add half of it to the chocolate mix.  Gently add the majority of the chopped almonds to the mixture, leaving a few flakes for decoration.

In glass, or clear plastic dessert bowls or glasses, put half of the chocolate mixture.  Then add a little whipped cream,more chocolate mix, then cream, and finish off with the remainder of the chocolate mousse.  Put in fridge.  Just before serving add whipped cream/topping, a little chocolate, and nuts to garnish.  The chocolate almond mousse will look as if it has clouds of white in it.

This quantity will make 3 servings, of a very rich decadent dessert, for chocoholics.
