
Basic Jambalaya.
1 large onion
2 tablespoons olive oil
3 sticks of celery
8 ounce can of tomatoes, in juice
8 ounces of sausage
1 tablespoon chopped parsley
seasonings of choice
grated Parmesan cheese
8 ounces of long grain rice
In a frying pan heat the olive oil, and cook onion and celery over a medium setting, until they are a golden color and soft to the touch. Add the rice and stir it into the ingredients. Then add the tomatoes, cut up sausages, seasonings, and parsley.
Continue to cook on a low heat until the sausage is cooked. When plating up, add Parmesan cheese to the dish.
This is a base Jambalaya recipe. There are many varieties that I have tried and made. When we were in New Orleans's, that is where my husband fell in love, with Cajun Jambalaya.
To give the recipe more flavor you can use any of the following food items to create your own Jambalaya: chicken, seafood, duck, peppers (all colors), stock, and/or garlic to give more flavor to the dish. Be creative and use whatever you have in your fridge and cupboards. No matter what you put in this dish, it will always taste good.
Cooking time varies between 20 and 60 minutes depending on the ingredients. The base Jambalaya takes around 25 - 30 minutes.
