Peanut butter and banana sandwich, my way

Today is Elvis Presley's birthday, and I wanted to celebrate it, with one of his favorite snacks/meals.

Peanut Butter and Banana Sandwich.

You will need:

2 slices of white bread, 3 tablespoons of peanut butter, a mashed banana, and a couple of tablespoons of melted butter or margarine.

In a bowl, mix together the peanut butter and banana. Next lightly toast the 2 pieces of white bread. Then spread the mixture into the middle of the two pieces of toast. Cover this with the melted margarine or butter, and then put in in a frying pan or skillet, and make it crispy brown on both sides.

This is the recipe, that is in some of the Elvis books and also I was told a similar version, when I visited Graceland.

I am a die hard Elvis fan. I have his original albums and extended plays from back in the 1950's. One of my favorite times, was the five days I stayed in Heartbreak Hotel, opposite Graceland. I got to go through the house twice, went on the planes, did the automobile exhibit, and spent a lot of time in the little eatery, where they had karaoke too. They had some of Elvis's favorite dishes on the menu.

I actually made the sandwich, and thought it would be way too rich and fatty for me, as I watch my weight, and calorie intake. Therefore I only used 1 tablespoon of peanut butter, and used 'Smart Balance' buttery spread, with no trans fatty acids. It was actually quite enjoyable. Eating the peanut butter and banana sandwich the Elvis way, and coupled with the huge amounts of fried bacon he ate, I can see that this contributed to the obesity in his later years.

Elvis you should have eaten salad, plain fresh vegetables, and less meat. Then you may have stayed around for a few more years. You are sadly missed.
