There is a long way to make Sausage Rolls or my shorter version. I always make them Christmas Eve and therefore want to save as much time as possible.
I buy a packet of Flaky or Puff pastry at our local Super Wal-Mart, 2 one pound rolls of sausage meat, and need a couple of eggs. Now that is easy.
Set the oven at 425 degrees.
Get the puff pastry out of the frozen packet and it is folded into 3 parts. Take one of the parts and put it on a working surface covered in flour, so it doesn't stick. Roll it out both long and short ways until it is very thin.
Next open the sausage meat and cover your hands in flour. Take a part of the meat and roll it between your hands so it forms a long thin roll, about 1 inch in diameter. Lay this on the pastry and make sure the roll goes to each end of the pastry.
Beat the eggs. Get a pastry brush or your fingers and put egg along the long edge of one side of the pastry. Then pull the other side of the pastry over the sausage meat and place on top of the pastry that has egg on it. Press the edges firmly together. Get a fork and press the edge down with the fork to make sure it is sealed. Take the brush and coat the top of the long sausage roll with the egg. Cut into individual rolls approximately 2 inches long. With a knife make a couple of diagonal slits in the top of each sausage roll.
Put the sausage rolls onto a greased baking tray and put in the oven for 12 - 15 minutes or until they are golden brown. Repeat these steps with the other 2 pieces of pastry.
My husband is insulin dependent diabetic and has heart problems but at Christmas he can eat as many sausage rolls as he pleases. This is his favorite English dish. Want to try more English food Yorkshire Pudding, Christmas Cake, Sherry, Brandy, or Rum Trifle.
