A quick easy way to make a delicious flavorful curry.

For 4 servings:

2 onions.

A small amount of cooking/vegetable/canola oil.

1 large or 2 small boned, skinned chicken breasts.

1 large sweet apple.

A couple of handfuls of raisins.

1 box of S & B Golden Curry sauce.  They do mild but I get the medium.

Water.

Cooked rice.

First let me say that I never use a recipe or if I do I don't measure. Could it be my days of owning a restaurant where you just grab a handful of this and that? I start off by cooking my rice in a saucepan of water. Hubby and I prefer the taste of dirty rice, and buy Wal-Mart's own make, as it is cheaper than the brand name.

Then Len peels the onions and slices them for me. I heat my skillet to 225 degs. and add a very small amount of Canola oil. Next I cook the onions until they look clear in color. While I am doing this Len will dice the chicken breast. I push the onions to one end of the skillet and brown the chicken cubes. It only take a couple of minutes.

Next I pour water over the onions and chicken until they are covered. Then add a chopped up apple, and I love the flavor of Gala apples, as well as the raisins to the skillet. I check on the skillet and turn everything so it cooks evenly and add more water if necessary. It takes about 15 minutes for the rice, and that works out just perfect with the curry up until this point.

I open my box of Curry sauce and it is hard sauce, in a tray, with segments that you can break up. I then put these into my skillet and continue to stir. It turns the ingredients brown and thickens really quickly. This is when I add more water and keep stirring until it reaches that perfect combination of curried chicken and sauce. The house is filled with the pugnant aroma of Asian cooking.

Hubby and I load our plates up with the rice and then spoon over the chicken curry. There should be enough for 6 - 8 people but we eat half on the first day and it is even better on the second day.

S & B Golden Curry sauce is available at the Super Wal-Mart, at the corner of Ridge Road and U.S.19, Port Richey. I have never found it at the one on the corner of Little Road and S.R. 54.
