Do you ever get invited to a potluck or bring a dish meal? What I like to do is make something suitable for diabetics or people watching their calories. I really get frustrated when we go out for a meal and there is nothing on the "dessert" menu for my husband.
Some really easy desserts.
Jello surprise.
1 can fruit in natural juices.
1 sugar free jello.
Lite cool whip.
Buy any can of fruit in natural juices. Peaches, pears, fruit cocktail etc. Drain off the juice and put fruit in the bottom of a dish.
Make the jello as stated on the packet, and I tend to use less water, and add the juice of the fruit for more flavor. When cool pour over the fruit. Pop it in the fridge to set.
Just before serving put the cool whip on the top and you can decorate with slices of fresh fruit.
No bake low fat dessert.
1 graham cracker pie crust. (lite, or reduced fat)
1 packet of sugar free instant pudding.
fat free or skimmed milk.
Lite cool whip.
Make the sugar free pudding as per the instructions. Then fill the pie crust with the instant pudding and put it in the fridge until set. This only takes minutes. Finish off with cool whip and any additional decorations you choose.
Fresh fruit.
If lost for a quick dessert go a local produce store and buy fresh fruit. Right now we have wonderful seedless grapes, apples, melons, plums, just to name a few. Slice, dice, or cut up the fruit. This is so refreshing and colorful.
How about a cheese board?
My husband always went for this at restaurants when we lived in England. Now he has to watch his fat intake. On special occasions he so enjoys a variety of cheeses, and water biscuits.
If you have no health problems then this is a perfect way to finish a meal. It takes only a couple of minutes to prepare and your guests will love it.
