Camping and hiking go hand in hand.  After a long hike or while you are out backpacking, give these campfire veggies a try to help refuel your body. 

Campfire Veggies-

2 sliced zucchini

2 sliced yellow squash

1 garlic clove

1/2 red bell pepper sliced (or diced)

salt and pepper to taste

olive oil

Slice veggies and lightly toss with olive oil.  Add garlic and appropriate amount of salt and pepper.  Prepare a cooking pouch for veggies using two sheets of foil.  Make sure the pouch is tightly closed and place the pouch in the coals of the campfire.  Cook approximately 20 min or until veggies are tender.
