
Imagine my surprise when my Wisconsinite husband had not heard of Beer Cheese. The land of cheese and beer doesn't have the two combined? Well, it turns out beer cheese is a southern recipe. And mostly a Kentucky thing apparently, which is where I'm from.
Beer cheese is a delicious dip/spread that you serve as an appetizer. Its main ingredients include cheese, and, well, beer. There are hot and mild versions of course, and you can control that by how much Tabasco sauce you add. As the beer goes flat, the flavors develop, so this is one of those recipes you can make ahead of time. Beer cheese is perfect for you to set out for your guests to snack on. Or by yourself, as you make dinner, not that I would ever do that or anything.
Beer Cheese
Grate all your cheese, or use bagged, I have done both. Toss it all in a bowl and mix well. Refrigerate overnight. I usually can't wait overnight and sample it right then, but I will let you make that decision yourself.
There is a small disagreement on the texture of beer cheese. Some people prefer it smooth, and others chunky. You can make your beer cheese smooth by placing it in a food processor.
Beer cheese goes well with crackers and veggies. Just provide a variety and let your guests choose. This is an excellent appetizer to set out for the Fourth of July.
