Puffed rosemary turkey wedges recipe

This is a fun, tasty way to use up leftover cooked turkey (or chicken!) after the holidays. After roasting a turkey, the last thing you want to do is mess with it after your meal. No problem, tuck it into a large bowl and cover it overnight. The next day pull off all the yummy cooked meat. Then cube it and separate it into freezer bags. The cubed, cooked turkey (or chicken!) will stay good up 3-4 months as long as you have gotten all the air out of the baggie.

Rosemary really makes these wedges special. I used fresh but you can substitute 1/2 teaspoon dried rosemary if that is what you have on hand.

Puffed rosemary turkey wedges
2 cups cubed cooked turkey (or chicken!)
1 Tablespoon fresh rosemary
3 green onions, sliced
4 oz cream cheese
2 Tablespoons milk
1 Tablespoon butter
1 sheet puff pastry
1 egg, for wash
Parmesan for topping

Defrost your turkey overnight. Chop up your fresh rosemary and green onions, and add them to the turkey. Combine the cream cheese, butter and milk on low until creamy. Add the cream cheese mixture to the turkey mixture and toss well.

Roll out your puff pastry sheet. Smooth out the lines, then cut into four squares (see slide show). Divide the mixture into the four squares, you might have a bit leftover.

Fold over the top left edge of the square to form a triangle (see slide show) and press down edges with a fork. Place on a baking sheet.

Whip egg and brush on the wedges with a pastry brush. Top with a bit of shredded Parmesan cheese.

Bake at 400 degrees for 20 minutes. Serve hot!
