             A mini Caprese salad for one and the two ingredients for the simplest recipe in the world.

 

 

 

 

 

 

Step into your garden. Pick a perfect red cherry tomato. Pluck a single fragrant basil leaf. Wrap the leaf around the tomato. Pop it into your mouth and savor the incredible goodness of summer food at its finest. Repeat until your hunger is sated. Call it a meal.

Tomatoes and basil, two plants that were made for each other, make gardening worthwhile. If you’re not growing them in your garden, plan, now, for next year. If you have no space for a garden, buy a hanging tomato planter. Next spring find started cherry tomato plants at your garden shop. Find a potted basil plant and carefully nurture it until the tomato is hanging heavy with ripe fruit. Then try the basil wrapped tomato. Or, take it another step and make a Caprese salad.

Caprese
Serves 2

Ingredients:
5 or 6 small fresh tomatoes
4 ounces fresh Mozzarella or goat cheese
fresh basil leaves, chopped
extra virgin olive oil
good quality wine-vinegar or balsamic vinegar
fresh ground black pepper
sea salt

Directions:
Slice tomatoes and alternate on plate with slices of fresh mozzarella. Scatter fresh basil over the top. Drizzle with olive oil and balsamic vinegar. Season with pepper and salt to taste. Let salad stand for a while to allow flavors to meld.
