Kale - A Super Food

I thought that for the next few articles I would highlight foods that are great for you, that some of you might not be familiar with. A great way to move forward on the continuum towards good health is to experiment with adding more fruits and veggies into your diet.

I'm starting with Kale because it increases the liver's ability to produce enzymes that neutralize potentially toxic substances. Since spring is a great time to cleanse your body, adding more green veggies like kale, will aid your liver in detoxifying.

In order to get the best tasting kale, choose varieties that have firm, brightly colored green leaves, and moist hardy stems. It can be stored in the fridge for one week, (Much longer if you use evert bags.) and it's best not to wash it until you use it as water will increase it's rate of spoilage.

You can try the following recipe for Kale-Apple Smoothie:
Blend 4 chopped kale leaves (stems removed. it's also best to cut the leaves into strips first.), juice of 1 lemon, a few thin slices of fresh or pickled ginger, 2 chopped apples ( I like granny smiths or crispins), and 2 cups H2O for 2 minutes. Serves 2.

Locally:  Kale can be purchased at most farmer's markets, Wegmans, Lori's Natural Foods, Abundance and Tops markets.
