How to make pomegranate guacamole


Healthy and delicious quacamole

I saw this being made on the Rachel Ray show, and I just had to try it!  In addition to making a tantalizing dish, this recipe is a boost to your overall health.  Pomegranates are rich in antioxidants, and help to keep the "bad " or LDL cholesterol from oxidizing.  Avocados have the ability to reduce LDL cholesterol too, as well as promote eye and skin health, and help to reduce high blood pressure.

Things You'll Need:

* 2 Avocados
* 1 Pomegranate
* 1 Tomato
* Lime Juice
* 1 Small onion
* Handful of cilantro
* 1 Jalapeno pepper (optional)
* salt & pepper to taste

  • First, cut the avocados in half, remove the pit, scoop out the flesh, and mash up the avocados in a bowl with a fork. (A good way to remove the pit is to gently hit it with a knife so the blade sticks into the pit, and then lift it out.)
  • Next, squeeze the juice of 1/2 a lime into the avocados and mix. (You may add more juice if you like, but I would wait until all the ingredients are mixed in. Then you can add more juice to taste.)
  • Dice the tomato and onion and fold it into the avocado mixture.
  • Then seed 1 small jalapeno pepper and add that to the mixture. If you want it to be spicy hot, include a few of the seeds as that is where the firepower lies. If you don't want much spice or heat you can add a banana pepper, and if you want no heat at all you may add a red/green bell pepper.
  • Finally, cut a pomegranate in half or quarters and place in a bowl of water. Remove the seeds by scooping them out under water. This eliminates staining your counter or cutting board.....thank you Rachel for that tip! Drain the seeds in a colander and fold them into the guacamole, and enjoy with your favorite chips or on tacos.
