Watching Martha Stewart make Irish soda bread and slather it with Kerry butter, I remembered a great source for Irish recipes that won't strain the old leprechaun costume -- Weight Watchers' Irish Web site!
You don't have to be a Weight Watchers member to check out the recipes on the site, which are HERE. I've found some great recipes there over the years, as well as on Weight Watchers' United Kingdom site (HERE).
The British WW site has a feature on eating in Ireland, with a recipe for soda bread HERE. Only problem is, you'll have to figure out the metric/imperial measurement thing.
On the Irish site, you can find Irish favorites like a Spring Vegetable Stew with Herby Dumplings or a "loofely" Steak, Mushroom and Guinness Pie.
On Weight Watchers' Australian site, I found a great recipe for Guinness Beef Stew (but you have to LOVE Guinness; it's intense).
And if you don't feel like fiddling with metric measurements (just Google it to fix 'em), check out the U.S. Weight Watchers recipe repository to find St. Patty's Day dishes like shepherd's pie, bread pudding, red flannel hash or corned beef and cabbage with red potatoes.
