So Easy: Luscious, Healthy Recipes for Every Meal of the Week (Wiley, $29.95)
Ellie Krieger knows how to make dishes that not only are delicious but healthy. She relies on fresh ingredients and simple techniques to whip up quick meals that won't have you going over your caloric budget.
Her latest book, So Easy: Luscious, Healthy Recipes for Every Meal of the Week, builds on the success of her last book The Food You Crave, and keeps the recipes simple for easy weeknight cooking.
There is a selection of grab-and-go breakfasts and lunches to keep your day from veering into the drive-through, and a month of dinners you can whip together in less than 30 minutes.
The full-page photos really showcase the dishes, such as Pork Piccata with Spinach and Garlic Mashed Potatoes, Garlic-Basil Shrimp and Chicken-Mushroom Quesadillas. And there are quick and yummy desserts like Pumpkin Rice Pudding and Powdered Sugar Crisps. I made the Mediterranean Tuna Wraps and they were quick and delicious, plus I pretty much had everything on hand from the pantry and fridge.
In all, there are 150 recipes with full nutritional information, side dish suggestions and ideas for making dinner prep easier, like cooking and freezing.
